2 smoked chickens hot off the smoker (I will share smoking techniques in another article)

White Sauce

  • 1 cup mayonnaise
  • 1 cup apple cider vinegar
  • 1 tbsp lemon juice
  • 2 tbsp cracked black pepper
  • 1/2 tsp kosher salt finely ground
  • 1/4 tsp cayenne

Mix all ingredients and refrigerate until needed. Keeps 4 days
Smoke chicken according to your favourite recipe. Dip hot chicken into white sauce or pour over and listen for the sizzle. Serve immediately and use extra white sauce to dip. I promise you this will be the best chicken you have ever eaten!
