This is a great “cheat” recipe that is so delish. You start with a rotisserie chicken and add a few ingredients, it looks like a lot of ingredients but they come together very quickly. This is easy enough for an every-day supper but fancy enough for company.
1 whole rotisserie chicken, skin removed, chopped into bite sized pieces
2 tablespoons butter
1 large onion, chopped
2-3 cloves garlic, minced
2 tablespoons grated fresh gingerroot
2-3 teaspoons chili powder
2 teaspoons ground turmeric
1-2 teaspoons ground cumin
½ teaspoons ground cinnamon
1-2 teaspoons ground coriander
1 x 28 fluid ounce can of chopped or pureed tomatoes
2 tablespoons tomato paste (fry tomato paste to rid tin taste first)
1-2 tablespoons brown sugar (or maple syrup which I used)
1 teaspoons kosher salt
½ teaspoon freshly ground black pepper
½ Cup 35% cream
½ cup plain, Balkan style yogurt OR sour cream
Fresh, minced cilantro
Melt butter in a deep 10-12 inch frying pan or skillet over medium heat.
Add onions and cook slowly, stirring often, until they are tender and translucent.
Add garlic & gingerroot to the onions and sauté for 1-2 minutes.
Stir in the chili powder, turmeric, cumin, cinnamon & coriander – Cook one more minute.
Pour in the can of tomatoes, diced or blended
Stir in brown sugar, salt, pepper and tomato paste
Cover, reduce heat and simmer for 15-20 minutes. Add the cream & yogurt (or sour cream) and stir until fully incorporated. Add the chicken to the sauce and heat through.
Serve over hot basmati rice, couscous, quinoa or pasta and top with cilantro.
