Sometime the simplest food gives us the most joy. Although I try not to eat a lot of potatoes I really do like these and they go perfect with every meal. Use a combination of red, white or sweet potato. I did not give quantities as it will depend on the amount of potatoes you are using

Roast Potatoes

fresh herbs (any variety you have, dill, sage, rosemary, thyme) or an Italian dry mix is good
olive oil
salt and pepper

Cover potatoes with cold water and bring to a boil for 10 minutes. Drain water and sprinkle potatoes with flour just to cover. Spread potatoes in roasting pan and pour olive oil and other ingredients in the pan. Stir well and roast 45-55 minutes at 400*, stirring occasionally. Small batches can be roasted in a toaster oven.
