This was so easy to put together and a big hit with my friends.  If I have leftover chicken I sometimes mix it with the cheese.


  • 20 Mushroom caps (or as many as you need)
  • Your favourite pizza sauce
  • Shredded mozzarella
  • Pepperoni slices quartered
  • oregano (optional)
  • Garnish with shredded basil


  1. Preheat (toaster) oven to 450 degrees F. In large ovenproof dish place mushroom caps upside down and bake for 15-20 minutes.  Fill each mushroom cap with pizza sauce, sprinkle generously with mozzarella & oregano.  Broil for 5 minutes or until cheese melts.  Garnish with fresh basil
