This salad works with different ingredients and quantities.  Use what you have and what you like!

5 ears of corn grilled
1 bunches baby arugula
green onion grilled
2 red peppers grilled, peeled and chopped
2 hand-fulls of green beans grilled
oven roasted heirloom tomatoes
sliced avocado
crumbled feta

Dressing

1/2 cup olive oil
1/4 white balsamic (or vinegar of your choice)
1-2 tablespoons maple syrup or honey
1 tablespoon grainy Dijon mustard
i clove garlic
1 tablespoon frozen orange concentrate (optional)
1 teaspoon salt & pepper (to taste)
1 tablespoon chopped fresh herbs (use what you have, basil, parsley, thyme, sage, dill, cilantro)

Mix and dress salad just before serving.
