1 1/2 cups butter
2 cups brown sugar
1 1/2 cups granulated sugar
2 teaspoons vanilla extract
4 large eggs
4 cups unbleached all-purpose flour
4 teaspoons baking soda
1 teaspoon salt
3 cups granola (I use a granola cereal)
1 cup large flake oats
1 1/2 cups chopped apricots
1 cup dried cranberries
1 cup chopped nuts (walnuts, almonds or pecans)
1/2 cup raisins
Optional: ½ cup of; chocolate chips, coconut, seeds – pumpkin, sunflower
Preheat the oven to 375 degrees F.
Cream the butter and sugars until smooth, with beater running add the vanilla and eggs, continue to mix. Next, add the flour, baking soda and salt, granola and oatmeal. Fold in the apricots, cranberries, nuts and raisins.
With a cookie or ice cream scoop (or two spoons), drop onto cookie sheets and bake for 12 to 14 minutes. Cool on a rack.
